Davis and his colleagues chalk up this declining nutritional content to the preponderance of agricultural practices designed to improve traits (size, growth rate, pest resistance) other than nutrition.”

“Efforts to breed new varieties of crops that provide greater yield, pest resistance and climate adaptability have allowed crops to grow bigger and more rapidly,” reported Davis, “but their ability to manufacture or uptake nutrients has not kept pace with their rapid growth.”

In other words, when acres upon acres of single crops like soy and corn are grown, and sprayed extensively with chemical pesticides, herbicides and fungicides, as well as synthetic fertilizers, the results are depleted nutrients and life in the soil, which means depleted nutrients in the crops.

Growing up on my grandpa’s farm, I’ve always been aware of these issues.

See, I am from a family who loves good food. Growing up, I grew and prepared food with my grandpa. It was the highlight of my childhood.

I remember my grandpa being so proud and beaming at the dinner laid out on the table – everything from our garden.

It meant so much to him to put good food on the table and that stuck with me.

I’ll never forget, one summer evening, the sun just setting behind the trees, sitting on the back porch with my grandpa–I was all of about 10 years old. I could still smell the summer breeze coming off the grassy field.

I looked over at grandpa, his rugged, dirty hands resting on the arms of his old chair.

He was looking out over the green pasture and was particularly quite. I could tell he was thinking about something important.

I walked up to him, he scooped me up and placed me on his lap.

What he said next would basically change the course of my life, set me on my quest, and is the reason I’m writing this letter to you now.

He said, “if you take care of the land, it will take care of you.”

Such a simple, and yet profound statement.

While studying and tending my own gardens over the years, I have made quite a few mistakes and even more profound discoveries.
