Pear-Balsamic Glaze Chicken

Sweet and savory wins. This rich yet bright dish will leave you satisfied and happy.


2 lbs. chicken breast, sliced thin

1 large pear, sliced into 1/2 inch wedges

1/3 cup balsamic vinegar

1/2 cup green onion, diced

2 cloves garlic, minced

salt and pepper to taste

2 tbsp butter

coconut oil for baking dish


1Preheat oven at 365 degrees

2grease baking dish with coconut oil

3place pear wedges on a single layer on bottom of baking dish


5drizzle half of the balsamic over pears

6layer chicken breast on top of pear slices

7drizzle remainder of balsamic over chicken

8salt and pepper

9top evenly with garlic and green onion

10top with butter

11bake for approx. 20-25 minutes of until chicken is fully cooked

12 20 Minutes

13warm small saucepan on medium heat

14remove chicken from oven when cooked

15carefully pour juice from chicken pan into saucepan and reduce over medium-high heat...

16... or use gluten-free flour of choice to thicken (tapioca flour, rice flour, etc)
